Yellow Lentil Soup with Kaffir Lime Leaf

Today’s recipe was not on my list, but my family requested me to share it here. This is one of the very easy yet amazingly refreshing dish. With only a handful of ingredients, this dish can be prepared anytime during the weeknights as well as in small gatherings over the weekends.
These days all of us are highly cautious about our diet, especially our daily intake of carbs. I like this soup as we can have it as a side with rice as well as just soup without rice. It fits well in our modern diet plan.
The key ingredient of this recipe is the Kaffir Lime leaf. I am lucky enough to have it in my backyard, (big kudos to my husband for his love for gardening!!) but it is also available in the market, as well as on Amazon to buy.

The yellow lentil is also known as Moong Daal, easily available in all grocery stores. The consistency of this soup depends on you, so adjust the water accordingly, so is the green chilies.

Ingredients
- 1 Cup of Yellow Lentils (Moong Daal)
- 5 Cups of Water (Adjust water as per your desired consistency)
- 2-3 Green Chillies
- 2 Kaffir Lime leaves
- 11/2 tsp Salt (as per taste)
Instructions
- Wash lentil well, before starting to cook.
- Boil yellow lentil (Moong daal) with 3 cups of water, salt, and green chillies.
- Set Instant Pot in manual setting, on high pressure for 5 minutes. Add Kaffir lime leaves as well before turning on. Next follow the last step.(Optional)
- If not using Instant Pot boil on stove top till the lentil is 3/4th cooked.
- Adjust water, I added 2 more cups of water, and check the salt.
- Add Kaffir lime leaves and boil it till the lentil is cooked
- Use a hand blender to blend the soup well dishing out the leaves and chillies. (Optional)
- Serve Hot!
