Quick n Easy Coffee Mug Cake
Nothing can beat a freshly baked cake! Here is another quick and easy mug cake recipe. Today’s flavor is Coffee! I love the concept of mug cake, as it is portion controlled and super easy to make, and can easily be scaled up or down as per your need. This Coffee Mug Cake recipe is very flexible and you can improvise as per your taste very easily.
The best part of making Mug cakes is I can customize the cakes as per the request. For example, in my mug, I added some dark chocolate in the middle to add additional flavor, whereas my son added caramel chunk to increase his. We can be as creative and wild as possible with this. As I often bake these Mug Cakes there are various versions of them In this particular one, I have used Almond Milk, simply because it was handy. I have also used some dark chocolates, and Harsey’s Kisses and small Marshmellow to decorate them. They are absolutely optional and not part of the recipe. No matter what you add on top of the basic recipe, the cake will taste great. In 5-10 mins you will have a warm, soft perfect coffee cake ready!

- 1 Cup Pancake Mix
- 1 Egg
- 1/2 Cup Almond Milk
- 1 tbsp Instant Coffee Powder
- 3 tbsp Butter
- 4 tbsp Sugar
- Mix all the ingredients in a bowl.
- Whisk the batter well.
- Grease the mugs with butter or oil
- Half fill the mugs with batter
- Decorate pre or post as desired.
- Microwave each for 45 seconds.
- Ready to be enjoyed!
