There are days when we all need a little sweetness to uplift our mood. Today I will share a very quick and easy way to pamper yourself on a very busy day. Nothing can beat a sweet nutty warm muffin with or without fresh coffee/tea at any time of the day! This Banana Mug Cake is perfect for that. Even though I try hard to not come to that stage but … Here is a way to use up those bananas in a very fulfilling uplifting way without much of an effort. The Chocolate Banana Mug Cake.

I have made several versions of banana muffins and banana breads and there are some very good recipes that comes out perfect. This recipe is a derivative of those. I still make big batches of warm muffins or banana breads, but this one comes handy when you have one or two black bananas that no one wants to eat and looking forward to go to waste bin, and you have a little craving for sweet-tooth.

I like my Banana cupcakes with walnuts, but my younger son prefers without, so it’s optional how you want to customize your cake. That goes with the chocolate chip too, as a few melted chips of chocolate in the warm cake make it unresistible in my household but completely depend on personal taste. If you keep the basic recipe the same in a minute you will get a fluffy warm soft cake in a mug. Do not forget to enjoy when it is still warm!!

Ingredients

  • 2/3 Cup of Pancake Mix (Bisquick/Krusteaz/Any brands)
  • 1 Egg
  • 1 Well Ripen Banana
  • 3 tbsp Sugar (if not adding chocolate chip may increase to 4)
  • 3 tbsp Butter
  • 1/4 tsp Cinnamon Powder
  • 1 tsp Vanilla Essence
  • A pinch of salt
  • 1 tbsp Walnut chopped (Optional)
  • 1 tbsp Chocolate Chip s (Optional)

Instructions

  1. In a bowl warm butter
  2. Smash the banana with a fork
  3. Add flour, egg, and sugar
  4. Beat it well
  5. Add rest of the ingredients
  6. Fold couple of times
  7. Grease the cups ( around 4, 8 oz cups)
  8. Half fill the cups with the batter
  9. Microwave on high for 45 sec to 1 minute each
  10. Enjoy when its warm!
