Okra Fry

Okra also commonly known in English speaking countries as Ladies Finger, is a very common vegetable in some of the Asian countries. In Bengal, we often make various dishes with it. I was not very fond of this vegetable because it gives a slimy or gooey mouthfeel when cooked. The only preparation that I liked was fried Okra.
Today’s recipe is a variation of the original, and believe it or not my kids one of the all-time favorite Indian dish.

It tastes great with white rice, butter/ghee (heavenly!).
I cut my Okras in thin slices so it cooks faster. One of the tricks in handling Okra is washing it before and let it air dry if possible to avoid the slime.

Ingredients
- 3 Cups of Sliced Okra
- 1 Cup of sliced Onion
- 1/8 tsp of Turmeric Powder
- 1 tsp Salt (as per taste)
- 1/2 tsp Sugar
- 1 tbsp Oil
Instructions
- Heat oil in a frying pan
- Add Onion, saute it for 2 mins
- Add Sliced Okra
- Fry in high heat with salt
- Add sugar when almost cooked
- Stir a few times, dish out
