Baked Salmon Bengali Style

Today’s recipe is inspired by “Bati Chorchori” which is a very special type of Bengali curries. This type of preparation, traditionally made in a bowl, mixing some basic ingredients like salt, turmeric, mustard oil, onion, tomatoes with the main vegetable or fish, and then slow cook in low flame until done. It is a very simple recipe yet it tastes fantastic when chosen the right vegetable/fish. The key here is the slow cook process, which blends the ingredients with the main vegetable/fish and enhances its taste and flavor. This is a very light and flavorful preparation.
Salmon was not widely available when I grew up back in Kolkata, so I never tried this preparation back home. The main criteria for this dish to be tasty is, picking the fresh fish. Salmon is one of my favorite fish. In my opinion, its unique flavor should be preserved and should not be cooked in rich sauce. That was the motivation for trying “Bati Chorchori” on Salmon.
This dish is very light yet flavorful. It has the kick of the spice of green chilies along with the sour taste of tomatoes. You can try to follow my recipe first time and then adjust these flavor according to your taste buds. This can be enjoyed with steamed rice, or just by itself. My all-time favorite “Baked Salmon”!
I like to marinate my fishes in lemon juice and salt for 10 minutes. Here you can mix all the ingredients in a bowl and then rub it onto the fishes, or mix everything together with the fishes. The fishes could be sized as per your preference. Below is the image of the fishes before mixing all the ingredients.
